Office Manager

Ms. Lolly Westmoreland – A. A. S. Harriman College

(Harriman College, A.A.S.) Mrs. Westmoreland has been married since 1982 and has one son who is an alumnus of Saint Joseph Catholic School, Melbourne Central Catholic H.S., the University of Florida. “Miss Lolly”, as she is known by many, has worked in the School office since 1990 where she listens to music all day long and sings along when the office is empty (or not). At home she plays the guitar, likes to read and loves to cook. At Saint Joseph’s, besides her day job, she helps with the annual golf tournament, the Veteran’s Breakfast and requests from extracurricular sports and clubs. Miss Lolly has seen hundreds of students pass through Saint Joseph Catholic School and remembers something special about each of them.

Ms. Falcao


Ms. Yvonne Falcao – B.S. State University of New York at Brockport

(Jamestown Community College, A.S.; SUNY Brockport B.S. in Math and Computer Science) Mrs. Falcao is married and has one daughter and one son, both of whom attended Saint Joseph Catholic School from Pre-Kindergarten through grade 8. She is an avid quilter and spends time nearly every day designing, piecing or quilting. She has been working at Saint Joseph Catholic School since 1997 when her youngest started Pre-Kindergarten. To her, SJCS is a great place to work because of the people who surround her.

Ms. Karen Cheslock

(Orange Memorial School of Radiologic Technology) She is married with two children who both attended Saint Joseph Catholic School. Mrs. Cheslock enjoys fishing, camping, canoeing, fossil hunting, diving, and jewelry making. She has worked at SJCS since 1996. To Karen, Saint Joseph’s is home.

Food Service – Cafeteria Manager

Mrs. Denise Sousa

Mrs. Sousa is married with one daughter who attended Saint Joseph Catholic School. Being with family and friends is what she enjoys most. Mrs. Sousa has been the cafeteria manager since 1997 and in 2010 began assisting in the office. Saint Joseph Catholic School is not just a job, it is family.

Mrs. Mary Driscoll

Mary Driscoll is married and has two daughters, both of whom are alumni of Saint Joseph Catholic School.  Mrs. Driscoll has worked as an administrative assistant for a local insurance agent for the past 18 years and has recently retired. She has enjoyed volunteering at the school since 1997 and working part-time in the cafeteria since 2004. She loves to watch old movies and baking during her down times. Mary loves Saint Joseph because of its faith based community.

Instructional Assistant

Mrs. Loretta Scarborough

Loretta Scarborough maintains certification in Child Development and Associate Equivalency Credentials, Early Childhood Professional Programs from the Childcare Association of Brevard County. Mrs. Scarborough is married and has 3 children – 2 daughters and 1 son. Her youngest daughter attended 7th and 8th grades at Saint Joseph Catholic School. Mrs. Scarborough enjoys reading the Bible, listening to gospel music, going to church, sewing, crocheting, shopping and traveling. She has worked at SJCS since 1997 and enjoys the freedom it affords her to pray and praise the Lord Jesus Christ anytime of the day.

Instructional Assistant

Mrs. Carol Weimar – A.A.S. State University of New York at Delhi

(University of New York at Delhi, A.A.S.) Mrs. Weimar has been an Instructional Assistant at Saint Joseph Catholic School since 1995. She works with all grade levels. She is married to her husband, Glen,  and they have two, active duty military, sons (Zachary and Marcus), who are both graduates of Saint Joseph Catholic School and Melbourne Central Catholic High School. She loves riding her Harley and enjoys taking road trips with her husband. Mrs. Weimar loves Saint Joseph School because her colleagues are truly her friends and she loves working with all the children.
